Stracciatella

In Puglia, a region in southern Italy, a delicacy was born from the union of simplicity and craftsmanship: Stracciatella.

The name Stracciatella derives from the Italian verb “stracciare,” meaning “to tear” or “to shred.”

The story of Stracciatella represents far more than a type of cheese; it embodies a culinary tradition rooted in one of the most valued principles of Italian gastronomy: the prevention of food waste. Through this philosophy, Stracciatella has evolved into a distinctive ingredient, earning a significant place in contemporary gastronomy.

Black Cod

Beurre Blanc Soslu Morina

Loire / Fransa

Black cod inhabits the cold, deep waters of the North Pacific, from Alaska to Japan, and is prized by chefs for its rich, buttery texture. Its companion, Beurre Blanc, is a silky French sauce made with white wine, vinegar, and butter.

According to legend, the sauce originated in the Loire Valley in the early 20th century when a chef accidentally forgot the egg yolks while preparing Béarnaise sauce, although the story remains disputed. Thus, the richness of a deep-sea fish meets the buttery elegance of French cuisine on a single plate.

Tarte Tatin

Tatin Tartı

Sologne / Fransa

In the 1880s, in Lamotte-Beuvron, in France’s Sologne region, the sisters Stéphanie and Caroline Tatin ran a hotel. When hunting season arrived, the rooms filled with hunters and the kitchen never stopped. As the story goes, Stéphanie, in a rush that day, left apples cooking in butter and sugar for far too long; they began to darken and the caramel to burn.

To save the pan, she laid pastry over the apples and slid it straight into the oven. Once turned out, it revealed a glossy caramel and tender, golden fruit. The hunters adored it, word reached Paris, and the “tarte Tatin” spread around the world as a masterpiece born of a mistake. The hotel still bears the same name today.
